Cooking For Two: My Half-Size Casserole Dish


To return to the topic that occupied us a couple weeks ago (and continues to occupy most of us every night when we stand in our kitchens): Cooking for two is a continuing battle, but this half-sized casserole dish is my secret weapon. Instead of wasting food on a family size portion that we can never get through, I make a small tray of lasagna, enchiladas or chicken. It makes about four servings, which leaves us with just enough leftovers for lunch the next day. Now if only if cupcake tins (and cupcake recipes) came in twos.

I swore by my 8x8 for so long. I bought a toaster oven pan set at Bed Bath and Beyond that has a 7x10 cake/roasting pan, and I prefer it now (maybe something about keeping the proportions of the full size). It also has a tiny rack, baking sheet (same size) and 6-cup muffin pan. I use these all the time.

I think it was mentioned on Lifehacker, but if you haven't checked this out yet, you should try Small Batch Baking I've tried a few so far (esp. cakes) with good results.

I have to practice cooking for 2 every night with my SO. It is hard. If you figure out a way to bake for 2 please let me know. I hate halving recipes because sometimes they just don't turn out right. I solve the baking dilema mostly by taking treats to work. But a half eaten cake just doesn't look the same when you are taking it in

Heather: I get a bit reckless with my baking sometimes, because it is so hard to bake for 2. But I usually have the best luck if I halve most of the ingredients but make sure to keep the leavening (baking powder, etc) around 3/4 of the original. Then I bake everything as cupcakes. It's not as pretty as a little layer cake (Small Batch Baking used variously sized cans, but I don't have the proper can opener for smooth sides), but it does the job; just keep an eye as they bake. Otherwise, I've seen small cake pans sold as children's kits in Sur La Table; but they are pricey. I'm going to check your blog now...
