When I was growing up, my mom kept bags of frozen vegetables in the freezer - pieces of carrot, kernels of corn, and those little round peas that I used to love to eat with my fingers. (Those peas became an important piece of family lore when my aunt found me stuffing them up my nose the afternoon my brother was born.) I would never think of feeding frozen peas to adults, but there is one frozen vegetable that I find indispensable: edamame.
Edamame can be boiled and left in their shells for quick horsd'ouvres when dinner guests arrive early (just sprinkle with coarse salt) or shelled for a protein-rich addition to salads. (The Escarole and Edamame Salad from the Jan '05 Gourmet Magazine is one of my favorite.)

I love Edamame, too. I've never been able to figure out how to cook it to perfect consistency. So, I just use the frozen individual servings from CostCo. You just microwave them to perfection in 3 minutes. And so convenient!

Microwaved edamame -- even more convenient! (Of course, that only works if your microwave isn't broken, but that's my problem.) To boil edamame, just look at the directions on the package -- each distributor should be pretty accurate about their own product.
